  • 4 pieces Boneless Skinless Chicken Breasts Approximately 6 ounces each.
  • 8 ounces Fresh Cremini or Button Mushrooms Sliced.
  • 4 cloves Garlic Minced.
  • 1 cup Low-Sodium Chicken Broth
  • ½ cup Heavy Cream
  • 2 tablespoons Olive Oil For sautéing.
  • 1 teaspoon Italian Seasoning
  • to taste Salt
  • to taste Freshly Ground Black Pepper
  • 1 handful Fresh Parsley Chopped, for garnish.

Instructions

  • 1. Prepare the ingredients: slice the mushrooms, mince the garlic, and chop the parsley.
  • 2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  • 3. Season chicken breasts with salt and pepper on both sides.
  • 4. Add chicken to the skillet and sauté for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • 5. In the same skillet, add sliced mushrooms and sauté for 4-5 minutes until browned.
  • 6. Add minced garlic and stir for 30 seconds until fragrant.
  • 7. Pour in chicken broth, scraping the bottom of the skillet to release browned bits.
  • 8. Stir in heavy cream and mix well.
  • 9. Add Italian seasoning and let simmer for 5 minutes.
  • 10. Return chicken to the skillet and simmer for an additional 5 minutes.
  • 11. Adjust seasoning with salt and pepper if needed.
  • 12. Garnish with chopped parsley before serving.
  • 13. Serve hot with your choice of side dishes.
