  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar Packed.
  • 3 large Eggs
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ½ teaspoon Salt
  • cup Vegetable Oil
  • 1 cup Powdered Sugar For the filling.
  • 8 ounces Cream Cheese Softened.
  • ½ teaspoon Ground Ginger Optional for the filling.
  • 1 dollop Whipped Cream Optional for serving.

Instructions

  • Preheat your oven to 375°F (190°C).
  • Prepare a jelly roll pan by lining it with parchment paper.
  • In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix well until smooth.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  • Gradually add the dry ingredients to the wet mixture, folding until just combined.
  • Pour the batter into the prepared pan, spreading it evenly.
  • Bake for 15-20 minutes or until a toothpick comes out clean.
  • Dust a clean kitchen towel with powdered sugar.
  • Invert the cake onto the towel and peel away the parchment paper.
  • Roll the cake up with the towel inside and let it cool completely.
  • For the filling, beat the cream cheese with powdered sugar and ginger until smooth.
  • Once cooled, unroll the cake and spread the cream cheese filling evenly.
  • Re-roll the cake tightly without the towel and wrap in plastic wrap.
  • Refrigerate for at least an hour before slicing.
  • Slice into 1-inch pieces and serve.

Notes

This pumpkin roll is perfect for holiday gatherings and can be made ahead of time. Store leftovers in an airtight container in the refrigerator.
