Instructions
Preheat your oven to 375°F (190°C).
Prepare a jelly roll pan by lining it with parchment paper.
In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix well until smooth.
Add the eggs one at a time, beating well after each addition.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the wet mixture, folding until just combined.
Pour the batter into the prepared pan, spreading it evenly.
Bake for 15-20 minutes or until a toothpick comes out clean.
Dust a clean kitchen towel with powdered sugar.
Invert the cake onto the towel and peel away the parchment paper.
Roll the cake up with the towel inside and let it cool completely.
For the filling, beat the cream cheese with powdered sugar and ginger until smooth.
Once cooled, unroll the cake and spread the cream cheese filling evenly.
Re-roll the cake tightly without the towel and wrap in plastic wrap.
Refrigerate for at least an hour before slicing.
Slice into 1-inch pieces and serve.
Notes
This pumpkin roll is perfect for holiday gatherings and can be made ahead of time. Store leftovers in an airtight container in the refrigerator.
