Instructions
In a large mixing bowl, combine 2 ½ cups of all-purpose flour and ½ teaspoon of salt. Whisk together.
Add 1 cup of cold, cubed unsalted butter to the flour mixture. Work the butter into the flour until it resembles coarse crumbs.
Gradually add 6 to 8 tablespoons of ice water, mixing gently until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least one hour.
Peel, core, and slice the apples. In a bowl, combine apples with lemon juice, ¾ cup sugar, 1 teaspoon cinnamon, and a pinch of nutmeg. Toss and let sit for 15 minutes.
Preheat oven to 425°F (220°C). Roll out one disc of dough to fit the pie pan, fill with apple mixture, and mound slightly in the center.
Roll out the second disc, place over the filling, trim edges, and crimp to seal. Cut slits in the top crust and sprinkle with sugar.
Bake on a baking sheet for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35 to 45 minutes until golden brown.
Let the pie cool on a wire rack for at least two hours before slicing.
Notes
For variations, consider adding raisins, nuts, or caramel. Serve warm with ice cream or whipped cream.
