Pie Crust

  • 2.5 cups All-purpose flour Foundation of the pie crust.

Filling

Instructions

  • In a large mixing bowl, combine 2 ½ cups of all-purpose flour and ½ teaspoon of salt. Whisk together.
  • Add 1 cup of cold, cubed unsalted butter to the flour mixture. Work the butter into the flour until it resembles coarse crumbs.
  • Gradually add 6 to 8 tablespoons of ice water, mixing gently until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least one hour.
  • Peel, core, and slice the apples. In a bowl, combine apples with lemon juice, ¾ cup sugar, 1 teaspoon cinnamon, and a pinch of nutmeg. Toss and let sit for 15 minutes.
  • Preheat oven to 425°F (220°C). Roll out one disc of dough to fit the pie pan, fill with apple mixture, and mound slightly in the center.
  • Roll out the second disc, place over the filling, trim edges, and crimp to seal. Cut slits in the top crust and sprinkle with sugar.
  • Bake on a baking sheet for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35 to 45 minutes until golden brown.
  • Let the pie cool on a wire rack for at least two hours before slicing.

Notes

For variations, consider adding raisins, nuts, or caramel. Serve warm with ice cream or whipped cream.
