Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Wash and peel (if desired) the potatoes, then cut them into even-sized chunks, approximately 1 to 2 inches.
  • In a large mixing bowl, combine the cut potatoes with vegetable oil and toss to coat evenly.
  • Add the spices: cumin, coriander, turmeric, chili powder, and salt. Mix well until the potatoes are evenly coated.
  • Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer.
  • Roast the potatoes for 30-35 minutes, stirring halfway through for even browning.
  • Check for doneness; they should be golden brown and crisp. If needed, roast longer, checking every 5 minutes.
  • Remove from the oven and squeeze lemon juice over the hot potatoes.
  • Transfer to a serving dish and garnish with chopped cilantro.
  • Serve warm as a side dish or snack.
